Cider bars to sample

I once spent a memorable evening in a cider bar in Madrid. I can’t tell you much, but I can tell you about the cider. There was a vast range of Spanish ‘Sidra’ to choose from, (from which I sampled many) all served in small glasses with a large amount of flair. The barman held a bottle at great height so that the cider created an epic arc through the air before hitting the glass held low in his other hand. I was later informed that ‘aerating’ cider like this is a ‘thing’ in Spanish cider bars. I was also encouraged to use the ornate wall-mounted hand pumps to add even more bubbles to my cider – in between sips – because apparently it would make me happier.
