From mustard lamb to a balti-style curry we share six of the best spring lamb recipes to try this month
With spring lamb in season and two bank holidays this month, there's no better time to pitch up, pick up some fresh lamb your local farm shop, fire up the barbecue and get cooking.

1. Mustard lamb with creamy lentils
Cooking time: 20 mins
This dish is a quick and tasty way to enjoy lamb at your pitch over a weekend. It's so simple to make and can easily be cooked on a single-ring gas stove

2. Lamb chops, tomatoes, feta, mint and new potatoes
Cooking time: 20 mins
It's springtime so I'm making the most of spring lamb and early new potatoes. Add a fresh tomato salsa, crumbled feta cheese and fresh mint for an ultra-simple but balanced plate of deliciousness.
Chops are great on the barbecue. They take next to no time and you can use your tongs to hold the strap of fat directly on to the grill so that it caramelises and crisps up. For me, this is the best part of the chop – having a sweet and crunchy edge to a deep savoury meat. Yum!

3. Lamb balti-style curry
Cooking time: 20 mins
This curry is so full of flavour – and gets even better if you reheat for the next day too
Don't be put off by the list of ingredients, many of them are just dry spices that you could combine in a little jar at home before you head off camping. You could also buy those handy puree tubes of garlic, ginger and chilli instead of prepping it fresh to make it quicker too.
4. Welsh Lamb, sweet potato and chick pea salad
Cooking time: 20 mins
This was made for me on a campsite by my friend and wonderful camping cook Helen Jenkins. She is married to a Welshman, and champions Welsh produce at every opportunity

5. Lamb lollipops, lemon couscous and griddled veg
Cooking time: 15 mins
This one is called lamb lollipops because you can use trimmed lamb cutlets and hold the bone ‘lollipop style’ to eat the lamb
Lamb is probably my favourite meat. It’s great to do on the barbecue and you don’t need to overcook it – I personally like my lamb a bit pink.
