1. Chilli crab shells
Serves 4
With very little effort, these attractive little mounds of fresh crabmeat with punchy zingy flavours make an impressive and tasty snack.

2. Red pepper tortill fingers
Serves 8, Cooking time 15-20 mins
This can be made with a variety of different ingredients along with the potatoes such as sun dried tomatoes, peas, ham, flakes of white fish and fresh herbs.
This is a good way of sneaking new ingredients in that younger children might otherwise not choose. Note: you can use a diced, fresh red pepper instead, but fry it with the onion to soften it.

3. Pea, mozzarella and mint bruschetta
Serves 2, Cooking time 5 mins
Inspired by the bounty of summer vegetable plots and the availability of peas, spring onions, herbs and leaves I'm sharing an idea to transform a piece of toasted bread into a memorable light lunch.
This dish doesn't need too many ingredients but the ones you use should be good quality to get the best flavours - which will be super summery, green and fresh.

4. Wensleydale rarebit with apple and onion relish
Serves 2, Cooking time 15
This is cheesy comfort and soul food on a plate. It's a delicious updated version of Welsh rarebit with a Yorkshire twist.
It is suitable for campers with a grill in their unit or on their gas stove. If you don't have one, it is also possible to 'bake' these using a lidded barbecue.

5. Griddled baby gem lettuce with stilton and walnuts
Serves 4, Cooking time 15 mins
The idea of grilling lettuce is unusual to many people, but it works wonderfully, and you will get to experience a new flavour to an ingredient that is usually tacked on to a meal as an afterthought.
Romaine lettuce also works well on the griddle - essentially you need to use lettuce with a tightly packed structure. I’ve used cider here, but a little beer will also work well.
