Potato Farls
I got the idea for making these on my trip to Northern Ireland. They are an essential part of every 'Ulster fry' breakfast served alongside bacon, eggs, black pudding and often a soda bread farl too.
Vegetarian
Where the English might add a potato rosti, the Northern Irish add a farl. 'Farl' is the Gaelic word for four parts, so in this case a round potato cake cut into quarters. They're really easy to make and can be fancied up a bit by adding thinly sliced spring onions, spices or some fresh herbs into the mixture.
