Venison, chocolate and sloe gin chilli
All too often we associate venison with rich stews but it's also great in burgers, flash-fried steaks and as here – in a chilli.

I've adapted this recipe from the one in my book Pitch Up, Eat Local. Hedgerow flavours such as blackberries, sloes and juniper berries all complement venison beautifully. Here I've used a little sloe gin to add an extra kick.
