Pea, mozzarella and mint bruschetta
Inspired by the bounty of summer vegetable plots and the availability of peas, spring onions, herbs and leaves I'm sharing an idea to transform a piece of toasted bread into a memorable light lunch.

This dish doesn't need too many ingredients but the ones you use should be good quality to get the best flavours - which will be super summery, green and fresh.
